Ponzu is an authentic Asian sauce that provides a unique taste experience thanks to the combination of fermentation and special spices. Its base is mild soy and sushi vinegar, with flavors enriched by fresh lemongrass, galangal, Thai basil, and kombu seaweed. The sauce, fermented for one month, carries umami, slightly sour, and spicy notes, which are completed by tuna flakes, lime, black cardamom, star anise, and ginger.
